Curry Leaf and Pepper Chicken

Chicken-500 gm / 1 lb (cut into medium sized pieces)

Garlic- 3 Cloves(chopped)

Ginger-1 tsp (chopped)

Onion(medium sized)- 1 diced extra small

Red Chili powder-1/2 tsp (adjust according to spice level)

Coriander/Dhania Powder-1/2 tsp

Salt or to taste-1/2 tsp

Peppercorns- 1 tbsp crushed

Curry leaves- 3 sprig(2 chopped, 1 whole)

Oil-2 tbsp

Coriander – to garnish

Instructions:

1.Heat oil in a frying pan.

2.Add garlic,ginger, chopped curry leaves,and onion. Fry till garlic & onion start to brown.

3.Add the chicken to the frying pan and mix.

4.Add chili powder, salt, coriander powder,and pepper, stir well making sure the spices coat the chicken.

5.Fry for about 25 min till the water evaporates and the chicken is cooked. Add the remaining curry leaves cook for 5 more min.

6.Garnish with Coriander,

7.Serve with Roti or Rice.

8.Enjoy!

Pudina (Mint) Chicken

Ingredients:

Chicken-500 gm / 1 lb (cut into medium sized pieces)

Garlic- 3 Cloves(chopped)

Ginger-1 tsp (chopped)

Mint/Pudina – 1 tbsp(ground to paste)

Red Chili powder-1/2 tsp (adjust according to spice level)

Coriander/Dhania Powder-1/2 tsp

Salt or to taste-1/2 tsp

Curry leaves- 1 sprig

Oil-2 tbsp

Coriander – to garnish

Instructions:

1.Heat oil in a frying pan.

4.Add chili powder, salt, coriander powder,and mint paste stir well making sure the spices coat the chicken.

5.Fry for about 25 to 30 min till the water evaporates and the chicken is cooked.

6.Garnish with Coriander,Curry leaves.

7.Serve with Roti or Rice.

Kerala Style Beef Fry

Ingredients:

Beef-500 gm / 1 lb (cut into extra small cubes)

Coconut Powder-4 tbsp

Dry Coconut- 5 small pieces

Garlic- 3 Cloves(Chopped)

Onion(medium sized)- 1 half diced

Mustard seed-1/2 tsp

Cumin/Jeera-1/2 tsp

Dry Red Chilies-2 whole

Green Chilies-2 whole

Red Chili powder-1/2 tsp (adjust according to spice level)

Corriander/Dhania Powder-1/2 tsp

Salt or to taste-1/2 tsp

Turmeric-1/2 tsp

Garam Masala-1/2 tsp

Curry leaves- 5 leaves

Oil-2 tbsp (I use vegetable oil)

Coriander – to garnish

Instructions:

1.Heat oil in a frying pan.

2.Add garlic, mustard seeds,cumin,red chilies,green chilies, coconut, curry leaves,and onion. Fry till garlic & onion start to brown.

3.Add the beef to the frying pan and mix.

4.Add chili powder, turmeric, salt, coriander powder,garam masala,and stir well making sure the spices coat the beef.

5.Add 1/2 cup of water.

6.Fry for about 25 to 30 min till the water evaporates and the beef is cooked.

5.Garnish with Coriander.

6.Serve with Rice or Parotta. Enjoy!

Mutton Korma

Ingredients:

Goat Meat -500g/1lb

Yogurt/Curd-3/4 cup

Garlic – 4 cloves(chopped fine)

Onion – 1 medium sized,diced

Tomatoes-1 medium size

Cashews- 10-15 or a fistful

Salt -1/2 tsp or to taste

Turmeric -1/4 tsp

Red Chilli Powder -1/2 tsp

Dhania powder(Coriander Powder) – 1/2 tsp

Garam Masala- 1 tsp

Green Chilies – 2

Oil – 2 Tbsp

Curry leaves- 1 sprig

Coriander to garnish.

Instructions:

1. Mix the meat with salt,turmeric,red chili powder,dhania powder, garam masala, and yogurt and let it marinate for at least 30 mins.

2. Heat oil in a sauce pan, when hot add chopped garlic,onion,cashew nuts,and curry leaves,fry till it starts to brown, add tomatoes and fry till tomatoes are cooked(turns to paste).

3. Cool it and blend it to a fine paste in a blender/mixer.

4. Transfer the marinated meat into the sauce pan and let it cook for 10 mins.

5. Add the paste from step 3, add 1cup water,green chili, and let it cook on a medium flame for 45 min to an hour until the meat is cooked.

6.Garnish with coriander.

7.Enjoy!

Notes:
Alternately you can cook the meat in a pressure cooker with salt,turmeric,red chili powder.

In step 4 you add the pressure cooked meat(with water),yogurt, dhania powder.

5.Add the paste from step 3, green chili, and let it cook on a medium flame for about 25 min.

Spicy Shrimp Masala

Ingredients:

Shrimp -500g/1lb

Garlic – 4 cloves(chopped fine)

Onion – 1/2 medium sized, diced really small

Pasta sauce/Tomato Puree – 3 Tbsp (quick substitute for tomatoes)

Salt -1/2 tsp or to taste

Turmeric -1/4 tsp

Red Chilli Powder -1/2 tsp

Dhania powder(Coriander Powder) – 1/2 tsp

Garam Masala- 1 tsp

Green Chilies – 2

Oil – 2 Tbsp

Curry leaves- 1 sprig

Lime juice- 1 tsp

Coriander to garnish.

Instructions:

1. Heat oil in a frying pan, when hot add chopped garlic, fry till garlic starts to brown,add onion, whole green chili,curry leaves & fry some more.

3. Add the shrimp, stir till the garlic & onion stick evenly to the shrimp, add salt, turmeric, dhania powder,& red chili powder, garam masala, & fry for about 5 min.

4. Add pasta sauce, stir and cook for 10-15 min.

5. Shrimp is now done, add lime juice and garnish with chopped coriander.

6. Enjoy!

Simple Fish Curry

Here is the Fish curry that I made recently. I kept things simple, no fancy ingredients.I used two cans of Spanish Mackeral that I had bought at the Dollar store, btw if you looking for a fish without much bone or scales Spanish Mackeral is a great choice.

Ingredients:
Salt -1/2 tsp or to taste
Turmeric -1/4 tsp
Red Chili Powder -1 tsp
Garam masala – 1/2 tsp
Dhania (Coriander Powder) – 1/2 tsp
Green Chilies – 3 whole
Curry leaves – 1 sprig
Coriander chopped – 1 tbsp
Garlic-3 cloves(chopped)
Onion-1/2 medium sized
Oil to fry

Instructions:

1.Heat oil in a pan. Add garlic and brown it,add onions, chilies and saute till they turn golden brown. Add garam masala.
2.Add the fish(with brine) adjust salt accordingly.
3.Added 1 cup water
4.Add Chilli powder, tumeric and dhania powder (lots of it to give it the sourness)
5.Let it boil for about 20-25min.
6.And Voila………. Tasty Fish Curry!

Chicken 65

Ingredients:

Chicken -500 grams/ 1 Pound
Ginger Garlic paste -1tsp
Salt -1/2 tsp or to taste
Turmeric -1/4 tsp
Red Chili Powder -1 tsp
Pepper Powder -1 tsp
Garam masala – 1/2 tsp
Corn Starch or All Purpose Flour – 1 Tbsp
Dhania (Coriander Powder) – 1/2 tsp
Vinegar – 1 tsp
Green Chilies – 2 (chopped fine) 3 whole
Curry leaves – 2 sprigs whole, 1 sprig chopped
Coriander chopped – 1 tbsp
Oil to fry

Instructions:

1.Mix Chicken, ginger garlic paste, salt, pepper powder,turmeric, red chili powder, vinegar, dhania, garam masala, coriander,and chopped green chilies and let it marinate for some time( the longer the better).

2. Heat oil in sauce pan and deep fry the marinated chicken together with the curry leaves and green chilies.

3.Garnish with onions, coriander, and lime.

4.Enjoy!

Coconut Shrimp

Ingredients:

Shrimp -500g/1lb

Ginger Garlic paste -1tsp

Salt -1/2 tsp or to taste

Turmeric -1/4 tsp

Red Chilli Powder -1/2 tsp

Dry Ground Coconut-1Tbsp

Corn Starch or All Purpose Flour – 1 Tbsp

Dhania (Coriander Powder) – 1/2 tsp

Vinegar – 1 Tbsp

Garlic – 3 cloves(peeled & chopped)

Green Chilies – 2 (chopped fine)

Oil – 2 Tbsp(I use Vegetable oil)

Coriander to garnish.

Instructions:

1.Mix shrimp, ginger garlic paste, salt, turmeric, red chili powder, coconut, corn starch, vinegar, dhania, and green chilies and let it marinate for some time( the longer the better).

2. Heat oil in a frying pan, when hot add chopped garlic, fry till garlic starts to brown.

3. Add the marinated shrimp, spread it evenly across the pan. Fry for about 10 min or until the shrimp starts browning.

4. Turn over the shrimp and repeat the process.

5. Once shrimp is done, garnish with chopped coriander.

6. Enjoy!

Notes:

Shrimp has a lot of water in it, I use a paper towel to pat it dry before I marinate it. If miss this step, I drain the water from the frying pan.

You can add cumin,mustard seeds with the garlic if you like them.

I sometimes add an onion to step 2. I like it either ways.
