Easy 30 Min Egg Curry

Here is an easy Egg Curry which can be cooked 30 min. I have tried to minimize the number of Indian spices so that anyone can cook it. A dish wouldn’t be Indian if it didn’t have red Chili powder, turmeric and seasoning(cumin,mustard) at the least, if you don’t have it use 1 tsp of curry powder or all spice that you usually find in the grocery stores. If you prefer to use fresh tomato instead of pasta sauce, dice the tomato into small pieces, add it after step 3 and cook them for 10 mins, continue to step 4 minus the pasta sauce. Add salt to taste.

Ingredients:
Eggs(Boiled)-4
Pasta Sauce-1/4 cup or 5 Tbsp
Onion-1/2 medium sized(Diced)
Garlic-3 cloves(crushed and chopped)
Oil- 2 Tbsp
Cumin-1/2 tsp
Mustard seed-1/2 tsp
Green Chili-2(Can be substituted with 1 Jalapeno)
Red Chili Powder-1/2 tsp
Turmeric-1/2 tsp

Instructions:
1.Heat oil in a pan.
2.When hot add garlic,onions,green chili, cumin, and mustard.
3.Fry till golden brown.
4.Add boiled eggs,pasta sauce,1/2 water, chili powder,and turmeric. Stir well.
5. The Pasta sauce already has salt in it, so add salt to taste.
6.Let it cook till the sauce thickens,about 10 mins.
7.The Egg curry is now ready.
